Position: Head Chef – 3AA Rosette
Operation: 5-star Hotel
Location: Outskirts of Glasgow
Package: OTE £60K+
Ellis Mack have an exciting opportunity for a passionate, experienced 3AA Rosette Head Chef for a 5 Star Luxury hotel based in Glasgow area.
With expansion plans in the pipeline this is a great opportunity to join an established forward thinking company.
Responsibilities as Head Chef include:
• To lead by example and ensure the kitchen team have excellent levels of personal hygiene and presentation standards
• To ensure that your kitchen is clean using effective cleaning rotas and keeping records
• To operate and have a thorough understanding of all statutory requirements under Environmental Health regulations such as Food Hygiene, Fire Safety, COSHH and HACAPS
• To assist with the ordering, storage and careful use of all kitchen supplies
• Liaise with suppliers to ensure effective use of purchasing
• To order and accept all deliveries to the highest standards and to ensure that all stock meets both company and legal standards
• Input into all areas of kitchen management inc all KPI targets such as GP %, environmental health issues, menu design etc.
Skills/Experience:
• Experienced Head Chef 3AA Rosette or very strong 2AA rosette experience
• Must have a strong but calm demeanour
• Work to the head chef philosophy but will have some flexibility to put your own stamp on it
• Be driven and focussed on first class standards across every aspect of the operation.
• Have shown loyalty and longevity throughout their career.
• Have excellent planning and organisational skills.
• Have excellent personal presentation and always be professional.
